PEPPERONI PIZZA MUFFINS

􀀗􀀃 11/2 cups sifted all-purpose flour
􀀗􀀃 2 teaspoons baking powder
􀀗􀀃 11/2 teaspoons Italian seasoning
􀀗􀀃 11/2 teaspoons salt
􀀗􀀃 1 tablespoon sugar
􀀗􀀃 1/2 cup olive oil
􀀗􀀃 3/4 cup fresh milk
􀀗􀀃 3 medium eggs
􀀗􀀃 3/4 cup grated cheddar cheese
􀀗􀀃 1 cup grated mozzarella cheese
􀀗􀀃 1/2 cup grated Monterey
Jack cheese
􀀗􀀃 1 cup diced red bell
peppers, sautéed
􀀗􀀃 1/2 cup diced pepperoni, sautéed
FOR THE TOPPINGS
􀀗􀀃 1/3 cup shredded cheddar cheese
􀀗􀀃 1/3 cup shredded
mozzarella cheese
􀀗􀀃 6 slices pepperoni, halved

1 Preheat oven to 375°F. Line muffin
tins with muffin cups. Set aside.
2 Mix flour, baking powder, Italian
seasoning, salt, and sugar in a bowl
until well combined. Set aside.
3 Mix together olive oil, milk, and
eggs in another bowl or measuring
glass. Set aside.
4 Make a well in the center of the
dry ingredients and pour in the
oil mixture. Stir just until evenly
distributed. Add cheeses, bell
peppers, and pepperoni.
5 Spoon mixture into prepared
muffin tins until 3/4 full. Top
each with cheeses and 2 to 3
pepperoni pieces.
6 Bake in the preheated oven for
25 to 30 minutes or until a
toothpick inserted in the center
comes out clean.
