5 Fresh tomatoes, diced
1 Tbs. lemon juice
1 tsp. Salt
3 cloves Fresh garlic
1/2 cup Onion, diced
1/2 cup Fresh cilantro, chopped
1 stalk Celery
1 Fresh carrot
1/2 Chili pepper, cored
Blend chili pepper, carrot, celery, lemon juice, and garlic.Mix in bowl with remaining ingredients.
Serving Suggestions:
• in taco salad
• as a dip
• topping for green leafy salad
• wrapped in a fresh, hot tortilla

Wales (the United Kingdom) showed tomatoes to be a protection against acute appendicitis and other digestive disorders. Fresh, vine-ripened tomatoes are the best.
