Vanilla & caramel parfait
serves 4
ingredients
100g/4oz butter
150g/5oz Demerara sugar
175ml/6fl oz single cream
450ml/3⁄4pt vanilla ice cream
• Heat the butter in a heavy pan.
Add the sugar and stir over a low
heat, without boiling, until the
sugar has dissolved.
• Increase the heat and simmer
without boiling for 3 minutes or
until golden. Remove from the heat
and allow to cool slightly.
• Layer the caramel sauce with the
vanilla ice cream into four tall
parfait glasses. Serve immediately.
