1 bunch watercress (1 pound)
11/2 cups boiling water
1 teaspoon sesame oil
1/4 teaspoon sugar
1 clove garlic, minced
1 carrot, grated
1 teaspoon sesame seeds
3 tablespoons soy sauce
1/8 teaspoon cayenne pepper or finely chopped red pepper, optional
Wash watercress. Remove undesirable leaves and tough stems. Cut
into 1-inch lengths.
Cook in 11/2 cups boiling water for 3 minutes. Drain thoroughly. Add
remaining ingredients, mix well, chill and serve.
