recipe will frost a pan of bars or a 9-inch single-layer cake.
½ of an 8-ounce container
soy cream cheese
1 tablespoon margarine,
room temperature
½ teaspoon lemon zest
2 teaspoons lemon juice
2½ to 3 cups powdered sugar, sifted
Using an electric hand mixer, cream together cream
cheese and margarine. Add lemon juice and zest. Blend
in powdered sugar 1 cup at a time until frosting reaches
desired thickness.
Yield: 1¼ CUPS
